Quick and easy roasted chicken

We are so used to see roasted chicken in whole or half, it is just looks so much more appetising in that way.

When Emma was 2 month-old, I craved so much for roasted chicken. I didn’t have time to roast the whole chicken because it takes at least 1.5 hours to be done and all we had in the freezer are ready cut chicken out of convenience. Out of desperation, I started to try to roast chicken in pieces and got it right after a few attempts. This method saves us a lot of time and work, especially from carving before serving. It also make it way easier for me to eat while feeding Emma dinner.

Ingredients
  

  • Half chicken (cut into big pieces)
  • olive oil
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp sweet paprika
  • salt and pepper

Instructions
 

  • Preheat the oven at 220C. Set the heating option to conventional heating (top and bottom heating element used).
    Set aside 1-2 pieces of chicken. Add the rest of the chicken pieces and all the dry ingredients into a big bowl. Drizzle some olive oil over and mix well to ensure the chicken pieces are evenly coated with the paste. Rub only olive oil and some garlic powder all over the chicken set aside for baby.
  • Lay the chicken over bed of vegetables of choice or on a roasting rack. Put the chicken for baby in a separate, smaller bakeware. Roast altogether at 220C for 10 minutes, then lower the temperature to 200C and continue to roast for 20-25 minutes.
    Check the doneness before serving the chicken to baby. Do not serve undercooked chicken to baby for safety reason.

Notes

  1. Choose a higher fat content chicken. Kampung chicken will end up too dry in this case. 
  2. Cut the chicken in rather big pieces, about 6-8 pieces per half chicken to prevent dryness.
  3. For variation, use a handful of rosemary and garlic cloves, with chicken only rubbed with olive oil, salt and pepper. 
  4. If you are roasting vegetables as well, drizzle some olive oil over the vegetables and add salt and pepper for seasoning before roasting. 
  5. This roasting condition works well with the quantity of chicken as described above, chicken pieces will be fully cooked and remain juicy. If you are doing only 1-3 pieces alone for baby, shorten the roasting time about 5-10 minutes to prevent dry out. You can check the doneness from time to time after 10-15 minutes. Make sure the chicken is fully cooked before serving to baby.
